FROMASE 2000 L is a liquid microbial coagulant derived from a selected Rhizomucor miehei strain and widely used in the food industry around the world. FROMASE 2000 L is of non-thermolability standard according to the DSM method of analysis. It provides benefits like consistent quality at a low price and label friendly formulation. FROMASE 2000 L induces coagulation through hydrolytic cleavage of the phenylalanine-methionine linkage of kappa casein (Phe-Met 105-106). It has excellent stability in solution between pH 3.0 and 6.5 and is suitable for all food types. FROMASE 2000 L is an acid fungal protease mucorpepsin with a molecular weight of approximately 40.000 Dalton. Its stability in solution and specificity on beta chain of insulin is very similar to that of animal rennet.
