Description

BakeZyme® AG 800 is a kosher and halal Enzyme preparation for food use containing amyloglucosidase (IUB: glucan 1,4-a-glucosidase) derived from a selected strain of Aspergillus niger. Application market: Baking: bread, biscuits, crackers, tortillas, flat bread, and pizza. Shortens fermentation time and improves browning, crumb structure and softness by increasing C02 production from the yeast. In other words, it is designed to improve gas production in sugar deficient dough, and frozen dough. It is very suitable for frozen dough. Typical dosage: 50 -100 ppm. Kosher and Halal approved. The producing micro-organism is of non-GM origin. Suitable for vegans and vegetarians. Standardised activity: 65000 ± 5 %. No gluten.
