BakeZyme® B 500 GF is an enzyme preparation for food use containing protease (IUB: endopeptidase) derived from aselected strain of Bacillus amyloliquefaciens. Application market: Baking: biscuits, crackers, tortillas, flat bread, and pizza. Accelerates dough relaxation for better machinability by breaking down the gluten network. Typical dosage: 10 - 350 ppm.
