Description

BakeZyme® FRESH XL is a kosher and halal certified enzyme preparation for food use containing maltogenic amylase (IUB: glucan 1,4-amaltohydrolase) derived from a selected strain of Bacillus subtili. Standardised activity: 11000 NMXL/g +/- 5 %. Recommended in a wide variety of applications e.g.: bread and steam buns. Increases moistness. Improves shelf life by keeping bread crumb soft during storage. Improves crumb resilience and moistness. Typical dosage: 5 -100 ppm. Suitable for vegans and vegetarians.
