BakeZyme® HFP is a kosher and halal enzyme preparation for food use containing hemicellulase (IUB: endo-1,4-β-xylanase), α-amylase (IUB: alpha-amylase), and protease (IUB: endopeptidase) derived from a selected strain of Aspergillus niger. Standardised activity: 2250 EDX/g ± 5 %. Application market: Baking: bread and flour. Hemicellulase for universal use, creating improved dough development, increased loaf volume and improved crumb structure. Typical dosage: 20 - 40 ppm.
