CAKEZYME SMART


Description

CakeZyme® Smart is a kosher and halal certified enzyme preparation for food use containing phospholipase A2 (IUB: phospholipase A2), derived from a selected strain of Aspergillus niger. It achieves higher levels of aeration during mixing of cake batter, which in turn increases batter viscosity and cake volume. It enable egg reduction by up to 25% for smart cost reduction, and improves volume, crumb structure and softness. Standardised activity: 5000 EYU/g +/- 5 %. Typical dosage: 0.05 - 0.1% on egg (250 - 500 ppm). Suitable for vegans and vegetarians.
