Ceska®-Star D337 is a concentrated culture in deep frozen pellets, containing bioprotective strains of Lactococcus lactis subsp. lactis biovar. diacetylactis and Lactococcus lactis subsp. cremoris, combined with the thermophilic lactic acid bacteria Lactobacillus helveticus. The culture is a nisin producing culture which is suitable as direct vat inoculant in order to help to prevent late blowing in the production of semi-hard cheese varieties like Gouda and Edam, including cheese made from raw milk and cheese for the organic segment.
