Delvo®Cheese CC-200 range consists of kosher and halal certified concentrated lactic acid bacteria culture blends for direct inoculation into milk. It is a range of ingredients from coagulant, acidification cultures and adjunct cultures that can be used in various types of cottage cheese productions. It was specifically developed for cheese plants using mesophilic solutions and delivers improved phage protection with four rotations and superior curd integrity. It allows medium and large scale cheese producers to create dairy products with great texture and mouthfeel, while maximizing profits through optimized processes. Properties Delvo®Cheese CC-200: classical style, rich flavour, no bitterness, good curd definition with rounded profile, low syneresis. Both the CC 200 and CC 300 range cultures can preserve the characteristic mild flavor over the course of the products shelf life.
