Description

Delvo®Cheese CT-200 series consists of mesophilic concentrated lactic acid bacteria culture blends for direct inoculation into milks. It is a range of ingredients from coagulant, acidification cultures and adjunct cultures that can be used in various types of enhanced continental cheese productions. Benefits: consistent acidification; phage robust, fast starter culture providing balanced round and slightly fruity flavour; and optimal cost/ quality ratio. Few eyes formation, semi-hard and a few holes in texture. Four bacteriophage unrelated versions of the product are available inrotations available 5 and 10 unit bags, also available in frozen form. Inoculation rate: 1 Unit/1000 L of Milk. Product composition: Leuconostoc mesenteroides ssp. cremoris, Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp.lactis biovar diacetylactis.
