KMC - Gelamyl 125 Potato-based Modified Starch gives you easy access to a wide variety of different textures for your plant-based gummy/jelly-type confectionery products – from soft to hard and from elastic to brittle. Gelamyl 125 has been developed to obtain required properties regarding texture and elasticity. The typical use level is 7 to 12%. Gelamyl 125 is a gelling agent that provides a soft to tender texture and a medium elasticity in moulded confectionery candy. It is also suitable for other types of confectionery products such as extruded products. Gelamyl ingredients provide a cost-effective alternative to more expensive traditional gelling agents, such as gelatine and gums. The starches form gels that are particularly clear and transparent and with a neutral flavor profile, ensuring bright colors and a full release of flavors. They are shear and heat resistant, retain low viscosity while hot, easy to handle during molding, and can be dried for as short as 24 hours (T 25°C).
