Description

Klerzyme® 150 is a kosher and halal certified enzyme preparation for food use containing polygalacturonase (pectinase) derived from a selected strain of Aspergillus niger. The powerful classical thermal stable pectinase is ideal for juice and colourr extraction from acidic red berries such as blackcurrant, aronia, cherry or cranberry. It is stable in acidic pulp (very low pH) or juice with high phenolic content.
