Rapidase® PEP is a kosher and halal certified liquid containing pectinmethylesterase (pectinase) derived from a self-cloned strain of Aspergillus niger. Standardised acitivity: > 5000 PE/g. The highly effective firming enzyme improves firmness of cubes or slices and keeps piece identity, and increases viscosity and mouth feel of fruit preparations, jams, sauces, purees, and salsa. Apart from improving texture and consistency of fruit preparations, it improves stability of cloudy juices (cider clarification) and is ideal for frozen vegetables. The producing micro-organism is of non-GM origin. Suitable for vegans and vegetarians.
